Who doesn't like a good muffin?

I don't bake a whole lot. I find it a little intimidating. When you're cooking you often see "adjust seasoning to taste" in recipes. But that's a little tricky to do once something is baked. Needs more salt? Too bad, sucker. Baking is just not quite as forgiving and I require a lot of forgiveness. But upon our return from my mom's house I felt the need to make something as a thank you to Ken's aunt and uncle who always take care of our horse (alright he's really a dog but if you've ever seen him in person you'd go with 'horse' too). On this particular dog sitting stint they also got to rebuild a part of our fence that fell over in some high wind. So you can see why I felt the need to go a little further in my thanks on this occasion. I put together a little basket of stuff and I wanted to add some baked goods. I decided to focused on something simple (or something I couldn't mess up too easily). I found a recipe for 'Basic Muffins' in my trusty Joy of Cooking. As a small aside, I love this cookbook. It is my constant. Daniel has Desmond, Desmond has Penny. I have the Joy of Cooking.

So here's the Basic Muffins with sour cream recipe:

In a large bowl whisk together:
2 c all purpose flour (I think I accidentally used bread flour)
1 T baking powder
1/2 t baking soda
1/2 t salt
1/4 t freshly ground nutmeg

In a 2nd bowl whisk together"
2 large eggs
1 c sour cream
2/3 c packed brown sugar
1 stick melted butter (still warm)
1 t vanilla

Add wet ingredients to dry ingredients and mix together until just combined. Do not over mix. Batter will not be smooth. Divide among 12 muffin cups. Bake at 400 degrees for 12-15 minutes.

You can add anything to these muffins- hence the name Basic Muffins. I topped mine with a mixture of softened butter, cinnamon and brown sugar. I also thought they would be really great with berries or nuts mixed in.

You can make these with milk or cream in the place of the sour cream. If you do that then take out the 1/2 t of baking soda as well. I really liked that the sour cream gave the batter a lot of body. It made muffins with a nice dome on top. I am a sucker for that kind of thing. Flat=homemade. Dome=fancy.

Also the amount of butter is variable. The recipe says 4 to 8 Tbs, but recommends actually using 8 if the muffins are not all going to be consumed immediately.

It sounds like you were pleased with the results. I'll have to give them a try. Is your fence all better now, or do you need some major repairs there? By the way, we went to that Vietnamese restaurant last night. I thought it would be a fun place to go when you come down again. It seemed pretty authentic, but never having been to Vietnam, I can't say for sure. It actually seemed quite "Chinese" (the real Chinese food).

10 years today

Dylan made me these hearts as an anniversary gift. Sweet, huh? Ten years ago I was newly graduated from college, in love and ready to get married! Well, technically I was freaking out about getting married, which probably made Ken feel super good. Most of you know this story and the rest of you probably don't care, but it's my blog, so ppppthhhht! Ken lived across the street from me during our last year of college (but curiously, we were 24 and 25. Oh, how I love BYU). He and his room mate spent many evenings, and when I say evenings I really mean late at night, in my living room talking to my room mates, Laura and Cheryl (hi guys!). I would emerge from my basement lair, tell them to pipe down and then retreat for my beauty sleep and morning classes. Ken would hang out then go home, watch a movie, go jogging at 3 am and then sleep until noon. Somewhere in there I assume he also studied a bit but maybe not. He probably just showed up and dazzled his professors with his ...

A few projects

I made this pair of puppies from this really cute crochet book: They were my first attempts at animals and they showed me just how hard it is to crochet evenly and then attach all the limbs correctly. Dylan and Caitlin accepted these two little guys and love them in spite of their lopsidedness. But I decided to try again: Following the same pattern I made these two little puppies. There are still many things about attaching limbs that I need to master. Once the puppies were stuffed their eyes never looked quite like they were supposed to and the noses were obviously stitched on off center. But I learned to pin the limbs into place with straight pins before sewing that that helped me out immensely. Here's the other project from the same book that I have been working on:

some things about me

Is it cheating if I reuse material from another place? Once in college I used a paper I had written for one class for an assignment in another class. I told the professor and he acted like he was giving me a free pass by accepting it. Whatever! I wrote it! Is it my fault that it fit the assignments for two different classes? Anyway, I hardly ever do these but I spent a really long time compiling this list for a facebook meme so I am reprinting it with permission from the author (me) here: 25 things about me. 1. I like the weather to stay between 67-73 degrees. Preferably with sunshine. I also love thunder storms on summer evenings in Utah. They smell amazingly fresh and rainy. I like to watch them from inside. 2. I have enough embarrassing moments to fill this list but one of the most embarrassing was once in college when I thought my car was dead. I called a room mate to come pick me up, she called her brother to come look at the car and tow it. He drove 45 minutes to rescu...
