Christmas treats

Every year I have great aspirations for all of the holiday baking I am going to do. And every year I end up eeking out one or two things and giving them to one or two people. This year I have resolved to keep it simple. I am making caramel corn. I will make as much as I can with what I have on hand, I will give that away, and then I will stop thinking about it. Here's the recipe:

Caramel-Nut Popcorn
from William-Sonoma Holiday Favorites

3 c freshly popped popcorn
1 c unsalted roasted cashews
1 c salted roasted macadamia nuts
1 c whole almonds or pecan halves
1 c firmly packed dark brown sugar
1/2 c light corn syrup
1/2 c unsalted butter
1 T finely grated orange zest
1/2 t salt
1 t vanilla extract
1/2 t baking soda

Preheat oven to 250 degrees. Grease a large roasting pan. Combine the popped corn and the nuts in the prepared pan, mixing well. Place in the oven as it heats while you prepare the glaze.

In a large heavy saucepan over medium heat, combine the brown sugar, corn syrup, butter, orange zest and salt. Bring to a boil, stirring constantly until sugar dissolves. Boil 4 minutes without stirring. Remove from the heat and mix in the vanilla and baking soda. Gradually pour the glaze over the popped corn mixture, stirring well to coat.

Bake until dry, stirring occasionally, about 1 hour. Remove from the oven. Using a metal spatula, free the popcorn from the bottom of the pan. Let cool completely in the pan.

Break into clumps. Serve immediately or store in an air tight container for up to 1 week.

I first made this recipe when we lived in Murray. I remember one batch that I forgot about until the billowing smoke from the oven reminded me that I still have one last batch of popcorn in there. Oops! It's a little pricey, what with the macadamias and cashews and all so after that burned batch I sort stopped making it for a while. But I am bringing it back, baby! If you're too far away for me to make some for you, make yourself a batch, write "Merry Christmas! Love, Mindy" on a card, place the card and the popcorn on the kitchen counter and let everyone believe that I sent it to you!

Dah-ude. You keep macadamia nuts and cashews on hand? I am uber-impressed. As I do not keep such things in my pantry, I won't be making any and giving it to myself from you. Maybe next year?

I guess I should have clarified that I won't make any more after I use up the ingredients that I bought for this recipe- no mad dashes to the store so that I can make just one more batch. I definitely do not keep macadamia nuts on hand! Also, any nuts can be subbed- peanuts, walnuts. Also, no nuts are really necessary. It could just be caramel corn!

Good idea. I think I should follow your example instead of adding more and more families to my goodie-giving list every day. Maybe I'll put them in alphabetical order... sorry, Whitmers! I ran out of popcorn - here's a cellophane bag full of love, instead!

I can attest to the deliciousness of this treat! I even got to stir the caramel-y mixture for awhile. I'm definitely going to try this at home! Thanks for the great tip, Mindy. My neighbors will thank you, too! And, thanks for a very fun visit! We love you ;)

10 years today

Dylan made me these hearts as an anniversary gift. Sweet, huh? Ten years ago I was newly graduated from college, in love and ready to get married! Well, technically I was freaking out about getting married, which probably made Ken feel super good. Most of you know this story and the rest of you probably don't care, but it's my blog, so ppppthhhht! Ken lived across the street from me during our last year of college (but curiously, we were 24 and 25. Oh, how I love BYU). He and his room mate spent many evenings, and when I say evenings I really mean late at night, in my living room talking to my room mates, Laura and Cheryl (hi guys!). I would emerge from my basement lair, tell them to pipe down and then retreat for my beauty sleep and morning classes. Ken would hang out then go home, watch a movie, go jogging at 3 am and then sleep until noon. Somewhere in there I assume he also studied a bit but maybe not. He probably just showed up and dazzled his professors with his ...

A few projects

I made this pair of puppies from this really cute crochet book: They were my first attempts at animals and they showed me just how hard it is to crochet evenly and then attach all the limbs correctly. Dylan and Caitlin accepted these two little guys and love them in spite of their lopsidedness. But I decided to try again: Following the same pattern I made these two little puppies. There are still many things about attaching limbs that I need to master. Once the puppies were stuffed their eyes never looked quite like they were supposed to and the noses were obviously stitched on off center. But I learned to pin the limbs into place with straight pins before sewing that that helped me out immensely. Here's the other project from the same book that I have been working on:

some things about me

Is it cheating if I reuse material from another place? Once in college I used a paper I had written for one class for an assignment in another class. I told the professor and he acted like he was giving me a free pass by accepting it. Whatever! I wrote it! Is it my fault that it fit the assignments for two different classes? Anyway, I hardly ever do these but I spent a really long time compiling this list for a facebook meme so I am reprinting it with permission from the author (me) here: 25 things about me. 1. I like the weather to stay between 67-73 degrees. Preferably with sunshine. I also love thunder storms on summer evenings in Utah. They smell amazingly fresh and rainy. I like to watch them from inside. 2. I have enough embarrassing moments to fill this list but one of the most embarrassing was once in college when I thought my car was dead. I called a room mate to come pick me up, she called her brother to come look at the car and tow it. He drove 45 minutes to rescu...
